My favorite ethnic food has to be Korean. Nothing like a grill full of Sam Sup Gal, three layered fat pork, with copious amounts of soju(rice wine) and a slew of side dishes ranging from Kimchee to plain sticky white rice. I first had this in Seoul Korea about 18 hours after I got off the plane with my first employer.
Another great dish I love is a meat in a bun I ate in Xian China. They have this large bun they put some sort of boiled beef into with a crushed egg.. tastes amazingly good. Costs about 1 dollar for 2 of them.

Japanese Food. I don't know where to start listing all of the good food.
The most I've ever had of Japanese food is a Teriyaki food place that was in one of the plazas at my university. Though I know you really can't call that real Japanese food, no more than you could call East Side Mario's Italian food.

I love Korean food too. Especially those little side dishes (banchan) that they serve with meals. My favorite dish is actually Jajangmyeon, and even though Koreans all seem to say it's Chinese, the Korean version is better in my opinion.
